Zucchini Avocado Salad…otherwise known as Heaven. So it’s not really a salad, but it’s got all the good greens in it, so we’ll call it a salad.  

I wish I could take credit for this deliciousness, but I can’t, I found it online at runningtothekitchen.com 

It goes great when you want major freshness, minimal macros and something that is oh-so good for you!  It’s a great side dish next to your favorite protein.

Makes 4 servings with: 14g carbs, 10.5g fat, 4g protein 

4 small Zucchini (I chose to buy 2 packages of the already spiraled zucchini from HEB)
1 Large avocado
1/2  Cucumber, chopped
Juice of 1/2 a lime (or lemon)
1 clove of garlic
2 tbsp almond or coconut milk
about 8 leaves of basil
Salt & pepper (to your liking) 
Halved cherry tomatoes (to your liking) & basil leaves for garnish

Place spiraled zucchini in a bowl. 

In a food processor combine the avocado, cucumber, lime, garlic, almond milk, garlic and salt & pepper and blend until smooth.

Toss the zucchini with the mix from the food processor until fully coated.

Top with cherry tomatoes and basil leaves. Add more salt & pepper if you desire.
